The Wanderers hit the lead in the 13th minute of Sunday's match when Danika Matos made the most of a series of slick passes to open the scoring.
But White silenced the home fans at Wanderers Football Park with a three-goal burst in the space of 10 minutes either side of halftime.
The 25-year-old's first came in the 41st minute when she latched onto a long lob from goalkeeper Courtney Newbon before rounding an opponent and sending the ball into the back of the net.
White gave Victory the lead in first-half added time when she collected a sliding pass into the box from Rachel Lowe before producing a calm finish.
And the destruction was complete in the 48th minute when she stuck out her left leg to connect with a dangerous whipped cross from Zoe McMeeken.
White almost scored a fourth goal in the 83rd minute, only for her header to bounce off the crossbar.
McMeeken was on hand to head home the rebound, ensuring coach Jeff Hopkins' 200-game milestone - the first ALW coach to achieve that feat - was a memorable one.
"He's awesome. We like to say that he's just like a dad, but you can see on the field he's got a lot of intensity and love for the game," White told Paramount+ when asked about Hopkins.
"It's been great to be nurtured by like a father figure, but also coach at the same time. He's able to flip that switch and bring that intensity and pressure."
White now has four goals from just two appearances, with her goal flurry against Western Sydney helping the Victory bounce back from their season-opening 3-2 loss to Brisbane.
The Wanderers, who lost 3-1 to Perth in round one, are the only team after two rounds still yet to pick up a point.
Western Sydney's only true moment of joy on Sunday came when Ella Jade Buchanan provided a neat assist for Matos to score the opening goal.
It was a nice moment for Matos, whose own goal resulted in a 1-0 loss when the teams last met in April.
