In Italy,coffee is not just a beloved hot drink, it also has found a place in Italian cuisine, which fits with the Kyabram cafe ethos. The most obvious example is tiramisu, one of the most famous Italian desserts in the world that is prepared with coffee.
For the past 12 years, coffee and food have been successfully delivered to the Kyabram community by the Papalias — Rocco and Maria, Rocco Jr and his sisters Sophie and Laura.
Rocco Sr says making a good coffee is built significantly on the foundation of having a stringent cleaning process.
“Keeping the machine clear is a key,” he said, explaining the business had grown from a two-grouper machine to a three-grouper and upgraded its grinder to create more consistency in its product.
Every member of the Marocco Cafe team is a barista and, according to Rocco, everyone will tell you they make the best coffee.
He said, without doubt, he drank the most. There are even two members of the team who make coffee, but don’t drink it.
“That’s no disadvantage,” he said. “There are a lot of things I make that I don’t eat.”
Rocco said that technically anyone could call themselves a barista, but there was one dead giveaway for those qualified.
“They will definitely be slower, because they will waste time doing all sorts of patterns,” he said, adding Rocco Jr did the best “coffee art’’.
While the morning is still the most popular time for coffee and about 90 per cent of his clientele are repeat customers, he admitted people did drink the product elsewhere, depending on who they were having a coffee with.
Sixty-five per cent of coffees are takeaway, but many people will start their coffee in-house and prefer the takeaway cups so they can leave at any time.
Cappuccino or cappuccino skinny latte remain the top sellers, while almond now runs second to dairy milk, with lactose-free rounding out the top three.
He said most people still had sugar, but not the high quantities they used to consume.
